SHIRATSUYU is the signature restaurant with a Japanese/French cuisine built on a philosophy of focusing on the ingredients. The culinary team take the ‘farm to table’ concept and enhance it by engaging with the guests to educate them on the origins of the produce – for example, where the seafood is caught off the coast of Iwate – and then asking how they would like their ingredients prepared, in a Japanese or French style. Japanese bar, MOCCO, located up on the third floor has been designed to evoke a secret hideaway above the mountains and is the ideal place to relax with a wide selection of Japanese whisky and other Japanese spirits.

At restaurants, café and bars

  • We disinfect tables and chairs with alcohol before service opens and after the customers use them.
  • The inside of the store is regularly ventilated.
  • Before the store opens and regularly, we carry out sterilization and disinfection with alcohol such as entrance doors and cashier counters.
  • When entering the store, please wear a mask and disinfect your hands with the disinfectant alcohol provided at the entrance.
  • Table sets,for soy sauce, salt, toothpicks, etc., are not put on the table. If you would like to use them, please ask the staff.

At a buffet restaurant

  • Please be sure to wear a mask when you enter the restaurant and take food to prevent droplet infection.
  • We will provide you vinyl gloves with you at the entrance. Please be sure to wear them when you take food.
  • Before the store opens and regularly, we carry out sterilization and disinfection with alcohol such as entrance doors and cashier counters.
  • The tongs will be replaced regularly.
  • We may restrict entry to the restaurant to alleviate congestion.
